How can sellers select a bank account for disbursements?

If you only have one bank account, GunTab assumes you want disbursements sent to that account.

If you have multiple bank accounts, GunTab assumes you want disbursements sent to the most recently-added verified account. However, you can set your default for disbursement by going to Account > Selling preferences.
